The Four Seasons of Sake: Explaining the Appeal of Spring, Summer, Autumn, and Winter

New Winter Sake: Freshness of freshly bottled sake

Winter is the most active season for sake production, with new brands being released one after another. New sake is recommended to be drunk within a few months of bottling, and is characterized by its fresh and fruity taste. In particular, "Shiboritate" or "Nama-zake" is fresh and flavorful to enjoy. It is also good to enjoy new sake in a warm room during the cold winter.

Spring Sake: Flavorful and gorgeous

In spring, sake brewed in winter is matured and a seasonal brand called "harusake" is introduced. The aging process enhances the flavor and aroma of the sake, giving it a floral and fruity flair. Spring sake, with its bright spring-like flavor, is a perfect match for events such as cherry blossom viewing. We hope you will enjoy them with the arrival of spring.

Summer sake is light and refreshing during the hot summer months. Many sake are fermented at low temperatures or contain carbon dioxide gas, and can be drunk not only chilled as is, but also with ice or soda water added for an even cooler feeling. With a refreshing taste that will not be overwhelmed by the summer heat, it is popular at summer banquets and beach parties.

Hiyoroshi" is sake brewed in winter and matured in a cellar during the summer, and is shipped in autumn. The aging process enhances the flavor and aroma, giving it a subdued richness and umami. It can be enjoyed in a wide range of temperatures, and is not only delicious chilled, but can also be warmed to deepen its flavor and enjoy it in a wide range of temperatures. It is recommended to be enjoyed with seasonal foods such as chestnuts and sweet potatoes in the fall.
