Wajima Monogatari" rescued from a damaged brewery
.
On New Year's Day, 2024, a major earthquake struck the Noto Peninsula,
The Shirafuji Sake Brewery also suffered tremendous damage, including the collapse of its warehouse.
In the collapsed warehouse, there were four tanks containing unrefined sake in the process of fermentation.
The "unrefined" is the product of the fermentation process of rice and water, the raw materials of sake.
This stage is very important in sake brewing and has a significant impact on quality.
.
In an attempt to rescue "unrefined" sake from the damaged brewery, Mr. Suzuki of the "Suzuki Shuzo Brewery" in Fukushima Prefecture and Mr. Takahashi of the "Takahashi Shosaku Brewery" rushed to the site about 10 days after the earthquake.
With the cooperation of both of them, we managed to rescue the unrefined sake from the tanks in the warehouse.
It was transported directly to the Goso Sake Brewery in Hakui, Ishikawa Prefecture, and
Mr. Toshi Yokomichi, a toji at Goso Sake Brewery, took the sake to the top of the tank and bottled it.
.
The result is "Junmai-shu Wajima Monogatari" (Junmai-shu: Wajima Story).
Fermentation progressed due to lack of management after the earthquake,
It is made drier than usual.
