The staff of Osaketo visited the brewery in late January.
After all, seeing the sake making process in person,

This year's Osake no Kai was held.
Three types of "Yamori", which are available only at special dealerships, and
Kinshu, a traditional local sake of Tokyo.

The "Yamori Junmai Nakadori Nama" (Junmai Junmai Nakadori Nama), which was kept fresh for this meeting, is

The Golden Wedding "Edo Sake Prince" is,

This yeast produces a unique sour taste,
And the natural lactic acid bacteria have wandered in quite a bit during the brewing process.

(Incidentally, this sake is made from Hachioji sake rice.
(Hence the name "Edo Sake Prince"!)
Aged for about a year, this time it's a special one,
Activated nigori sake, not for sale.
Cold sake, of course,
It really comes into its own with hot sake.
Served at two temperatures: 55°C and 45°C.
We enjoyed the change in flavor at three different temperatures.
Finally, sweet kijo sake is paired with sweets.
It goes well with dried fruit cream cheese.
It was delicious poured directly over vanilla ice cream.
